Pumpkin Spice Pancakes, Sriracha Maple Bacon, & Creamy Scrambled Eggs

Pumpkin Spice Pancakes are here!! After seeing countless pancake houses in Gatlinburg over fall break, I was inspired to make a pancake breakfast for my people at Fox. This was the first time I’ve mixed up my own pumpkin pie spice mix and it resulted in a spicier, warmer flavor. These thick, fluffy pancakes can be drizzled in syrup or whip up some salty, spiced maple butter like I did. The Sriracha Maple bacon had everyone in the studio coming back to the kitchen to snag a slice. And whenever I scramble eggs, I don’t overthink it and add water, milk, or cream. When you use good quality eggs, patience, and the right cooking temperature, you won’t need to add anything else for a tender, soft scramble.

Pumpkin Spice Pancakes

Ingredients
  

Pumpkin Pie Spice Mix

  • 3 tbsp cinnamon
  • 2 tsp ground ginger
  • 1 1/2 tsp nutmeg
  • 1 1/2 tsp allspice
  • 3/4 tsp cloves

Pancakes

  • 3 cups flour
  • 1 tbsp baking powder
  • 1 1/2 tsp baking soda
  • 2 tsp kosher salt
  • 4 tsp pumpkin pie spice
  • 1/4 cup brown sugar
  • 1 1/2 cups buttermilk
  • 1 15- oz can pumpkin puree, scant 2 cups
  • 4 eggs
  • 3/4 stick butter, melted and cooled, plus additional for cooking pancakes
  • maple syrup, for serving

Whipped Maple Spice Butter

  • 1 stick butter, softened
  • 2 tbsp maple syrup
  • 1 tsp salt
  • 1 tsp pumpkin pie spice

Instructions
 

  • Pumpkin pie spice is easy to buy at any grocery, but if you already have the following spices in your cabinet, mix this up and put it in an empty spice jar to enjoy all season long. Combine all ingredients in a small bowl and transfer to a small jar or container to store.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. In a larger bowl, combine the brown sugar, buttermilk, pumpkin puree, eggs, and melted butter. Add the dry ingredients to the wet and stir gently with a spatula until just combined. Do not over mix and do not fret about small lumps in the batter. This is a thick batter that yields thick pancakes. Add additional buttermilk to thin the batter if you prefer.
  • Heat a nonstick skillet or pancake griddle to medium heat. Melt a pat of butter on the cooking surface and pour about ¼ cup batter into each pancake (I like to use a self-release scoop for easy, neat portioning) and cook pancakes for about 2-3 minutes on the first side. They’re ready to flip when bubbles form on the surface and when the outside edges start to look set and dry. Flip and cook for 1-2 minutes on the other side. Stack and slather with Whipped Maple Spice Butter or drizzle with maple syrup.
  • For Whipped Maple Spice Butter, in the bowl of a stand mixer, whip the softened butter, maple syrup, salt, and pumpkin pie spice until combined and fluffy.

Sriracha Maple Bacon

Ingredients
  

  • 1 lb thick sliced bacon, about 10-12 slices
  • 2 tbsp maple syrup
  • 1 tbsp sriracha hot sauce

Instructions
 

  • Preheat oven to 400 degrees. Arrange the bacon in a single layer on a parchment or foil-lined, rimmed baking sheet and bake for about 12-15 minutes, until the bacon is starting to brown, but is not yet crisp. In a small bowl, combine the maple syrup and hot sauce. Using a pastry brush, glaze the bacon with the maple mixture and return to the oven. Continue to cook until crisp. If desired, drain the bacon on a rack, but be careful using paper towels, as the bacon is sticky and will adhere to them.

Creamy Scrambled Eggs

  • 1 dozen eggs
  • 2 tbsp butter
  • salt and pepper

  • If you like your scrambled eggs soft and creamy, it’s more about the execution than the actual ingredients, although I do find that good quality, pasture-raised eggs yield the best results. Heat a large nonstick skillet over medium-low heat. Whisk the eggs well in a large bowl. Melt the butter in the pan and add the eggs. As soon as the egg mixture starts to set on the outside edges and the bottom of the pan, stir and scrape with a flexible spatula, moving the cooked egg toward the center of the pan. Continue to do this slowly and patiently, until the eggs are soft-set. When you think they are almost done, remove them from the heat (they will continue to set) and season them with salt and pepper to taste.
