Tomato Pesto Soup with Parmesan Toast & Kale Quinoa Salad

Tomato Pesto Soup
Ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 1 large onion, diced
- 2 28- oz cans diced tomatoes with basil
- 2 cups chicken broth, or 2 cups water with 1 tbsp chicken bouillon
- 1/2 cup basil pesto, store-bought or homemade
- salt and pepper, to taste
Instructions
- To make the soup, heat a large pot over medium heat. Melt the butter with the olive oil and sauce the onion until soft and lightly browned, about 5 minutes. Add the tomatoes and broth and simmer for 20-30 minutes. Stir in the pesto. To finish the soup, blend with an immersion blender until smooth and season with salt and pepper.

Pesto Parmesan Toast
Ingredients
- 1/4 cup basil pesto, store-bought or homemade
- 1/4 cup mayonnaise
- 1/2 cup mozzarella cheese or Italian blend, shredded
- 1/4 cup parmesan, shredded
- 4 slices good-quality bread, such as sourdough or Italian loaf
Instructions
- To make the toast, combine the pesto, mayonnaise, and cheeses. Heat your oven to broil. Spread liberally onto bread and place onto a baking sheet. Broil for 4-6 minutes, watching closely to prevent burning, until cheese is melty, bubbly, and brown.

Kale Quinoa Salad
Ingredients
- 1 bunch kale, stemmed and cut into 1/2 inch ribbons
- olive oil
- kosher salt
- 1 cup quinoa, cooked
- 1 cup blueberries
- 4 ounces white cheddar, grated or cut into tiny cubes
- 1 cup pecans, toasted and chopped
- balsamic vinegar, I like to use a flavored option like blueberry or strawberry
Instructions
- In a large bowl, massage the kale with a liberal drizzle of olive oil and salt. It should turn from matte to glossy and decrease quite a bit in volume. Add the cooked quinoa, blueberries, white cheddar, and pecans. Toss and dress to taste with additional olive oil, salt, pepper, and a very nice, good-quality balsamic.
