Molasses Crinkles, Hazelnut Snowballs, & Chocolate Dipped Cookies
Get your butter and sugar out for some Christmas cookie baking!! Molasses Crinkles are chewy, easy, and ship beautifully. I’m partial to shortbread and butter cookies this time of year and these Hazelnut Snowballs are crisp, buttery, and full of toasted hazelnuts. If you don’t want to bake, just dip some Oreos or Ritz (preferably sandwiched with PB) in chocolate. Make them, pack them up, and share with your neighbors!
Molasses Crinkles
Ingredients
- 1 stick butter, melted
- 1/4 cup molasses or sorghum
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1/4 tsp salt
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp allspice
- 1 tsp ground ginger
- 2 cups flour
- 1/2 cup raw sugar, for rolling
Instructions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper.
- In the bowl of a mixer, beat the melted butter with the molasses, both sugars, and egg. In a small bowl, whisk together the salt, baking soda, spices, and flour. Add the dry ingredients to the wet and stir to form a cohesive dough.
- Using a scoop or a tablespoon, roll the dough into 1-inch balls. Roll in sugar and place on baking sheets. These will spread and crinkle as they bake. Bake for 12-14 minutes, until cookies are crackly and lightly browned on the edges. Cool briefly on cookie sheets before transferring to a rack to cool completely.
Hazelnut Snowballs
Ingredients
- 2 sticks unsalted butter, softened
- 3/4 cup powdered sugar, plus more for rolling
- 2 tsp vanilla extract
- 2 cups flour
- 1/2 tsp salt
- 1 1/2 cups hazelnuts, toasted and finely chopped in a food processor
Instructions
- Preheat oven to 350 degrees.
- In the bowl of a mixer, beat the butter with the powdered sugar until fluffy. Add the vanilla and beat again to combine. Add the flour and salt and mix to form a thick dough. Lastly, add the chopped nuts and mix to incorporate.
- Scoop and roll the dough into 1-inch balls and arrange on a baking sheet. They won’t spread much. Bake for about 15 minutes, until cookies are just barely browned on the bottoms. Remove from oven, cool for about 5 minutes, then roll in a bowl of powdered sugar to coat. Allow the cookies to cool completely, then roll in the second layer of powdered sugar.
Chocolate Dipped Cookies
Ingredients
- Melted chocolate or melted white chocolate
- Ritz or similar buttery crackers
- Peanut Butter, Nutella, or cookie butter
- Oreos
- Christmas sprinkles
Instructions
- Spread Ritz crackers with the spread of your choice and place another cracker on top to form a sandwich. Dip these and Oreos into melted white or dark chocolate and set on a parchment-lined baking sheet. Add some Christmas sprinkles and allow to set before eating or wrapping up for gifting.
