Christmas Morning Casserole & Cinnamon Sugar Waffles

What is your Christmas breakfast tradition? If you need a couple new ideas, I made a tater tot casserole with sausage, eggs, and peppers that was so good!! Crisp on top, cheesy in the middle, and a complete meal in a pan. Then I pressed refrigerated cinnamon rolls in my waffle iron! Brush them with melted butter and sprinkle with cinnamon sugar and eat them right away.

Ingredients
  

  • 1 lb bulk breakfast sausage
  • 1 medium onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 cup whole milk
  • 8 eggs
  • pinch kosher salt and freshly ground black pepper
  • 2 cups cheddar cheese, shredded
  • 1 32- oz bag frozen tater tots, may not use them all

Instructions
 

  • Preheat oven to 350. Butter a 9×13 baking dish. In a skillet over high heat, cook and crumble the sausage. Add the onion and diced bell pepper and cook until vegetables are soft, about 6-8 minutes. Scatter the sausage vegetable mixture into the baking dish. In a large bowl, whisk together the milk and eggs. Season with salt and pepper, then pour over the sausage and vegetables. Sprinkle with the cheese, then arrange the tater tots neatly in a single layer over the eggs. Bake until eggs are set and tots are crisp on top, about 40-45 minutes. If desired, turn on the broiler for a couple of minutes at the end to crisp up the potatoes.

Cinnamon Sugar Waffles

Ingredients
  

  • 1 package refrigerated cinnamon rolls, 8 ct
  • 2 tbsp melted butter

Cinnamon Sugar

  • 1/4 cup granulated sugar
  • 1 tbsp cinnamon

Instructions
 

  • Heat a waffle iron to medium-low heat and spray with cooking spray. Depending on the size of the waffle maker, place 1-4 cinnamon rolls on the iron. My waffle maker holds two. Close the iron and cook waffles for about 2-3 minutes, until they’re golden brown on the outside and no longer doughy in the center. Remove from the iron, brush with melted butter, and sprinkle with cinnamon sugar. I like mine just like this, but if you need a little extra sweetness, heat the icing that came with the cinnamon rolls and drizzle it on top of the waffles.
  • For cinnamon sugar, whisk together sugar and cinnamon, then place in an empty spice shaker.
