Lemon Chicken Thighs & Green Beans Almondine

Happy New Year!! If you make resolutions and yours include anything along the lines of eating healthier, saving money, or spending quality time with your family, I have the answer: cooking at home! Lemon Chicken Thighs are so easy and get nice and crisp in the oven. Sauté a vegetable, cook a starch, and dinner’s on for less than $2 a serving. I know it can seem hard and daunting during busy times. Sometimes the process is messy and there’s cleanup to deal with. Sometimes your kids won’t eat it!! But then there are times when Asa asks for my chicken skin and Tess sticks green beans in her mouth to look like a walrus and we all have a laugh over a satisfying, nutritious dinner. For me, it’s worth it for so many reasons. Here’s to a 2023 full of new things to cook, eat, and share with you!

Lemon Chicken Thighs

Ingredients
  

  • 8 chicken thighs, bone in, skin on
  • 1 lemon, zested and then sliced
  • 1 tsp fresh thyme, minced (plus about 3-4 sprigs for roasting)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 1 onion, sliced
  • 1 head garlic, about 10-12 cloves

Instructions
 

  • Preheat oven to 450 degrees. With a sharp knife, remove any extra fat and excess loose skin from the chicken thighs to leave a nicely trimmed chicken thigh. If wet, pat the skin dry with paper towels.
  • In a small bowl, combine the lemon zest with the minced thyme, salt and pepper. Rub this mixture on the underside of the chicken thighs and over the skin. In a 9×13 baking dish, scatter the onion, garlic cloves, lemon slices, and thyme sprigs. Arrange the chicken thighs on top and bake for 35-45 minutes, until the internal temperature registers 165 degrees. If needed, turn on the broiler to brown and crisp the skin for a couple minutes. Use a wooden spoon or fork to mash the now softened garlic and lemons into the pan drippings. Discard the lemon rinds, but serve the saucy, lemony onions and garlic with the chicken, accompanied by rice or orzo and your favorite green vegetable.

Green Beans Almondine

Ingredients
  

  • 1 lb green beans, trimmed
  • 1 tbsp butter
  • 1/4 cup sliced almonds, toasted
  • salt and pepper, to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Prepare an ice bath in a large bowl. Drop in the green beans and cook for 3-5 minutes, until green beans are bright green and crisp tender. Remove with a slotted spoon and transfer directly to the ice bath to stop the cooking. Drain and set aside. Heat a large skillet over medium high heat and melt the butter. Toast the almond slices in the butter, stirring constantly, until lightly browned and fragrant, about 1-2 minutes. Add the green beans and sauté for another minute or two to heat through. Season with salt and pepper and serve.
