Fall Bread Pudding & Bourbon Chocolate Fondue
Squeezed in an extra morning at the station to feature some bourbon desserts just in time for Breeders’ Cup!! Bourbon Chocolate Fondue is the easiest dessert ever that everyone loves. And I can’t think of Keeneland without craving bread pudding. This Fall Bread Pudding with Bourbon Pecan Sauce is packed with apples, dried fruit, and topped with the easiest, yummiest caramel sauce. Make them and enjoy watching the races this weekend!
Fall Bread Pudding
Ingredients
- 1/2 cup orange juice
- 2 tbsp bourbon, divided
- 1/2 cup raisins
- 1/2 dried cranberries
- 2 cups whole milk
- 2 eggs
- 6 cups bread cubes, from a ciabatta or French loaf
- 3/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla
- 2 apples, peeled and diced into 1/2-inch cubes
Bourbon Pecan Sauce
- 1/2 stick butter
- 1/2 cup heavy cream
- 3/4 cup brown sugar
- 1 tbsp bourbon
- 1 cup pecans, chopped and toasted
- bourbon smoked salt, to taste
Instructions
- In a small saucepan, heat the orange juice, 1 tbsp bourbon, raisins, and cranberries. Bring to a simmer and turn off the heat, allowing the fruit to rehydrate and plump up for about 10 minutes. In a large bowl, whisk the milk and eggs and soak the bread cubes for about 10 minutes to soften. Add the sugar, cinnamon, salt, vanilla, and remaining tablespoon of bourbon. Fold in the diced apples and rehydrated dried fruit (it should have absorbed all or most of the liquid; discard any remaining or put it in your next cup of tea!) Pour into a greased 9×13 pan and bake at 375 degrees until set, about 35-45 minutes. Serve with Bourbon Pecan Sauce.
- To make the Bourbon Pecan Sauce, bring the butter, cream, brown sugar, and bourbon to a simmer in a small saucepan. Add the pecans and season well with salt.
Bourbon Chocolate Fondue
Ingredients
- 1 cup heavy cream
- 12 oz chocolate chips, semisweet or dark
- 2 tbsp bourbon, or more to taste
- pinch bourbon smoked salt , or sea salt
- fruit, such as strawberries, pineapple, bananas, apples
- crunchy dippables, such as graham crackers, pretzels
- soft dippables, such as marshmallows, cubed pound cake, or brownie bites
Instructions
- Heat the heavy cream in a small saucepan to a simmer. Place the chocolate chips in a fondue pot or heatproof bowl. Pour the cream over the chocolate and whisk to combine. Add the bourbon and a pinch of salt. Use it for dipping fruit or treats of your choosing.
