2heads romaine lettuce, washed and cut into 1/2 ribbons
4ribs celery, thinly sliced on the bias
2carrots, peeled and shredded
1 5-ozcontainer blue cheese crumbles
3cupscooked chicken, from a rotisserie chicken, cooked breasts, or frozen breaded chicken tenders are my personal favorite
Buffalo Ranch Dressing
1/2cupmayonnaise
1/2cupsour cream
1/2tspgarlic powder
1tsponion powder
1tspItalian seasoning
1/4cuppickle juice, I use a sweet, spicy bread & butter pickle
3tbspbuffalo sauce, plus more to taste
salt and pepper, to taste
Instructions
To make the dressing, whisk everything in a bowl until smooth. Season with salt and pepper.
For the salads, divide the lettuce into 4 big bowls. Top with celery, carrots, blue cheese crumbles, and chicken. Drizzle generously with dressing and additional buffalo sauce, if desired.
