Dumpling Noodle Soup

Ingredients
  

  • 6 cups chicken broth
  • 1 thumb sized knob ginger, sliced into fat coins
  • 12-16 dumplings, from recipe link in notes, or you can use store-bought frozen wontons
  • 1 12-14 oz package Asian style noodles
  • 8 oz baby bok choy, choy sum, or broccoli
  • 4 oz shiitake or baby Bella mushrooms, thinly sliced
  • 1 large carrot, julienne
  • 2 green onions, the green parts, sliced

Instructions
 

  • Bring the chicken broth and ginger to a simmer in a medium pot and allow to steep for about 20 minutes. Season to taste with salt.
