Fried Chicken Tenders & Buttermilk Waffles

So good to be back feeding some of my favorite people today for Meal Time Monday!! Spring Break is next week and when I was brainstorming kid-friendly recipes for slow mornings, Asa said, “how about chicken and waffles?” So here we are! Crisp homemade chicken tenders and buttery waffles. My plate gets green onions and a drizzle of hot honey, while the kiddos prefer theirs plain or with powdered sugar.

Fried Chicken Tenders

  • 2 lbs chicken tenders, about 12, tendons removed
  • 3/4 cup buttermilk
  • 1 tsp kosher salt
  • 1 pinch each of garlic powder, onion powder, paprika, and black pepper


  • 1 cup corn starch
  • 1 cup flour
  • 2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp freshly ground black pepper
  • vegetable oil, for frying
  • sliced green onions, for serving

Hot Honey

  • 1/2 cup honey
  • 2 tbsp sriracha, or hot sauce of your choice
  • 2 tbsp hot water


  • Place the chicken tenders in a bowl and cover with the buttermilk, salt, and seasonings. Stir and let marinate on the counter for 30 minutes to an hour or place in the refrigerator for several hours. In a shallow bowl or pie plate, combine the breading ingredients and whisk with a fork to combine. One at a time, remove a chicken tender from the buttermilk, shaking off the excess, and place in the breading, pressing down and turning to ensure an even, thick coating. Place on a sheet pan until ready to fry.
  • Heat about 1/2 inch of oil in a frying pan. Fry the chicken tenders in batches until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels. Serve with waffles, garnished with green onions and drizzled with Hot Honey.
  • For Hot Honey, stir together the honey, sriracha, and hot water to create a thin, spicy syrup that can be drizzled over your chicken and waffles.

Easy Buttermilk Waffles


  • 1 3/4 cup flour
  • 2 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1 3/4 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 stick butter, melted and cooled


  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a 2 cup liquid measuring cup, measure out the buttermilk, then whisk in the eggs and extract. Pour the wet ingredients into the dry bowl and gently stir. Before it’s smooth, add the butter and continue to stir to form a thick batter.
  • Heat a waffle iron and spray with cooking spray. Scoop the batter onto the iron and cook until nicely browned and crisp.
