Beer Cheese Patty Melt & Espresso Chip Blondies
My mom taught me how to cook really good food, but my dad is the one who taught me how to to enjoy eating really good food. He loves a good burger with a cold craft beer and he has always been a Peet’s coffee man, which is what I drink every morning. Beer Cheese Patty Melts and Espresso Chip Blondies were a very easy menu to write for him. I hope I can cook it for him soon!! What will you make for the dad in your life this weekend?

Beer Cheese Patty Melts
Ingredients
- 1 tbsp butter, plus more for griddling bread
- 1 tbsp olive oil
- 2 onions, very thinly sliced
- 8 slices of thick white bread, such as sourdough or Texas toast
- 1 lb ground beef
- 2 tbsp Worcestershire
- salt and pepper
- 1/4 cup bbq sauce
- 3/4 cup store-bought beer cheese, we used Halls
Instructions
- Heat a large stainless steel skillet over medium heat. Add the butter and olive oil and cook the onions, stirring often, until they are softened and nicely caramelized. If they start to brown too quickly, add a tbsp of water to the pan at a time. This will lift the caramelized sugars off the pan and put them back into the onions. The onions should shrink quite a bit and be very flavorful.
- Heat a nonstick griddle and melt some butter in order to griddle the bread. Toast the bread on both sides.
- Divide the ground beef into four portions and form them into patties that are roughly the shape of the bread. Sprinkle the patties with Worcestershire sauce and season with salt and pepper. Heat the stainless skillet over high heat and cook the burgers for 2-3 minutes on either side. Mine were quite thin and cooked very quickly. Brush the tops with bbq sauce.
- To assemble, spread beer cheese onto one piece of toasted bread. Top with a burger patty and a layer of caramelized onions and another piece of toasted bread.

Espresso Chip Blondies
Ingredients
- 2 sticks butter
- 1 1/2 cups brown sugar
- 2 tbsp instant espresso
- 2 tsp vanilla
- 2 tsp baking powder
- 1 tsp bourbon salt
- 2 eggs
- 2 cups flour
- 1 1/2 cup chocolate chunks or chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- Prepare a 9×13 baking pan by lining with foil, then grease with baking spray.
- In a medium microwaveable mixing bowl, melt the butter in the microwave in 20-second intervals until melted. Whisk in the brown sugar, instant espresso, vanilla, baking powder, and salt. If the mixture is very hot, allow to cool slightly before adding the eggs. Whisk in the eggs, then add the flour and mix to combine. Lastly, add the chocolate chips. Transfer to the baking pan and bake for 22-26 minutes, until the top is shiny and crackly. Do not overbake. Allow to cool completely and cut into even squares.
